Meals for Busy Moms

We all seem to have different 'tastes' at our house, so it's taken many tried & tried again recipes to find ones we all eat. If you have any awesome recipes you want to share please tell me about them in the comment section!

Sweet Potato Veggie Burgers
makes 7-8 large patties

2 cans cannellini white beans, drained
1 large sweet potato, baked/peeled/mashed (about 2 cups)
1 tbsp of hummus or tahini
2 tsp honey
1 tsp of mequite seasoning or any kind of "burger" seasoning you have
1 tsp of cumin
1 tsp of black pepper
1/4 cup wheat flour

salt to taste if needed

plentiful bread crumbs or Panko crumbs
oil for pan- you can use whatever kind you prefer

Directions:

1. Bake or cook sweet potato in microwave. Peel, place in large mixing bowl.
2. Add drained beans to mixing bowl. Use a hand mixer to combine beans and potato together.
3. Add all te oter ingredients and blend until tey are mixed together well.
4. Heat 1 Tbsp oil in a pan over high heat.
5. Form a patty from mixture and coat in breadcrumbs. Then drop the patty in the pan. Repeat until the pan is filled. Cook until browned on both sides.
6. Transfer cooked patties to paper towel. Cool for a few minutes.
7. Serve on a toasted English muffin.  I added Vegenaise®, fresh spinach, tomato slices, onions, and avocado. It was simply delicious...well 'simply' is probably not the best word to use because there are so many flavors going on with this sandwich.

You can bake this too. Bake at 375 until golden brown. I think you will need to flip it. 

Grilled Chicken with Chipotle Vegetables
Delicious & Colorful
It looks fancy but you can't get much easier than this...trust me!

Ingredients
  • Chicken breasts (Get the amount that is right for your family.We typically buy 4 breasts.)
  • 1 bag of chipotle seasoned fiesta vegetables. You can usually find this in the freezer section of your local grocery store. If not just buy the items separately.                                                                         If you purchase the veggies separately then you will need:
  • 1 bag of frozen corn
  • 2 Sweet potatoes chopped and cooked (or 1 bag of frozen)
  • 1 can (about 15 ounces) black beans, rinsed and drained
Directions 

Season your chicken breast with a spicy or chipotle grill seasoning. You can also choose a marinade if you don't like seasonings.
Put the vegetables into a pan. I use a large pan to make sure all the vegetables are warmed/cooked thoroughly.
Plate the food. I like to cut the chicken, but you can always just serve the whole chicken breast on top or beside the vegetables. 
Serve warm with a glass of ice tea! This is so Southern! You will love it. We always have left over vegetables that I use to make a yummy lunch later in the week.

Fiesta Chicken Casserole


This is so good and it literally takes about 15 minutes from start to popping it in the oven. You can also change it up in so many ways. This recipe is courtesy of Campbell's® Kitchen.

Ingredients
  • 1 package (15 ounces) refrigerated pie crust (2 crusts)
  • 1 jar (16 ounces) Pace® Chunky Salsa
  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 cup sour cream
  • 8 ounces shredded Cheddar cheese (about 2 cups)
  • 1 package (24 ounces) frozen whole kernel corn
  • 2 cans (9.75 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained
  • 1 can (about 15 ounces) black beans, rinsed and drained
Directions 

Let the pie crusts stand at room temperature for 15 minutes or until they're easy to handle.

Stir the salsa, soup, sour cream, cheese, corn, chicken and beans in a large bowl. Spoon the chicken mixture into a 13 x 9 x 2-inch baking dish.

Unfold the pie crusts on a lightly floured surface. Lay the crusts side-by-side so that they overlap by about 3 inches in the center. Press the seam to seal. Roll the pie crust into a 14 x 10-inch rectangle. Place the pie crust over the chicken mixture. Trim the excess crust from the edge. Cut several slits in the crust.

Bake at 400 degrees F for 40 minutes or until the crust is golden brown.

Shrimp, Tilapia, Tofu, & Vegetable Salad.
This is seriously delicious & packed full of healthy ingredients.

Ingredients
  • 2 filets of Tilapia or any white fish you prefer
  • 1 pound of cooked, peeled, & de-vained shrimp.
  • 8 ounces of cubed tofu
  • 1-2 large bag(s) of fresh mixed greens 
  • Seafood seasoning
  • 1-2 apples for crunch and garnish
  • Extra virgin olive oil
Directions 

Grill or bake the tilapia until the juices run clear. I usually grill my fish the same day we grill chicken and keep it in the fridge for lunch the next day. 
Pour about 2 or 3 table spoons of extra virgin olive oil in to a skillet. It's always important to have a good quality olive oil when cooking. 
Mix the cooked Tilapia, tofu, and shrimp in a large skillet. Sprinkle on your favorite seafood seasoning. 
Divide the mixed greens into bowls or plates. Pour the seafood and tofu mix over the greens.
I don't even add salad dressing to this because it is already so flavorful! You can choose to add one if you want & you can always change up the main meats.
Cut your apple and garnish each plate.
This could feed 4 easily. Enjoy!


Simple Snack....Toasted Bread of Choice with Fruit Spread

This is super simple and my family loves it!
1. Set aside about 2/3 cup of butter or light margarine spread. Get it to room temperature.
2. Choose a fruit spread. We absolutely love apricot so that's what I used here. Mix about 1/2 cup of fruit spread with the room temperature butter. Use a mixer if you want to.
3. Add 1/2 tsp of vanilla extract and mix again.
4. Choose a bread, I used thick cut Italian bread here, and cut it into thick slices. 
5. Toast the bread and spread on the Apricot Fruit Spread.

This is a great accompaniment to a cup of coffee in the morning. :-) Enjoy!

Grilled Cheese Hearts, Veggi Sticks, and Hummus Dip

 My daughter, MG, absolutely loves hummus dip. There are so many things you can use hummus for but one of her favorites is to dip veggi sticks in it. Veggi sticks and chips are a healthier alternative to regular 'ol potato chips.
